Recipe of the Month – Skillet Shepherd’s Pie

  • 1 lb ground beef
  • 1c chopped onion
  • 2c frozen corn or carrots, thawed
  • 2c frozen peas or green beans, thawed
  • 2T ketchup
  • 1T Worcestershire
  • 2t minced garlic
  • 1T cornstarch
  • 1t beef bouillon granules
  • 1/2c cold water
  • 1/2c sour cream
  • 3-1/2c mashed potatoes
  • 3/4c shredded cheddar cheese

 

Cook beef & onion over medium heat, drain. Stir in corn, peas, ketchup, Worchestershire & garlic. Cover & cook on med-low for 5 minutes.

Blend well the cornstarch, bouillon & water; stir into beef mixture. Bring to a boil over med heat; cook & stir for 2 minutes or until thickened. Stir in sour cream & heat through (do not boil).

Spread mashed potatoes over the top; sprinkle with cheese. Cover & cook until potatoes are heated through & cheese is melted. Yield 6 servings.
