SKILLET SHEPHERD’S PIE
- 1 lb ground beef
- 1c chopped onion
- 2c frozen corn or carrots, thawed
- 2c frozen peas or green beans, thawed
- 2T ketchup
- 1T Worcestershire
- 2t minced garlic
- 1T cornstarch
- 1t beef bouillon granules
- 1/2c cold water
- 1/2c sour cream
- 3-1/2c mashed potatoes
- 3/4c shredded cheddar cheese
Cook beef & onion over medium heat, drain. Stir in corn, peas, ketchup, Worchestershire & garlic. Cover & cook on med-low for 5 minutes.
Blend well the cornstarch, bouillon & water; stir into beef mixture. Bring to a boil over med heat; cook & stir for 2 minutes or until thickened. Stir in sour cream & heat through (do not boil).
Spread mashed potatoes over the top; sprinkle with cheese. Cover & cook until potatoes are heated through & cheese is melted. Yield 6 servings.
